Will was thrilled with tonight’s post-dinner activities, which included art projects and baking. Because it was quick and easy, I chose this recipe:
| CHOCOLATE CHIP MUFFINS | |

1 egg
1/2 c. milk 1/4 c. salad oil 1 1/2 c. Gold Medal flour 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1 c. (more or less) chocolate chips Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups. Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan. |

Nothing particularly revolutionary about it, but Will was thrilled. THRILLED. Watched them brown and rise through the oven door with the attentiveness of a child looking for Santa to come down the chimney.

I think he’s intrigued by the whole chemistry of it all. How wet stuff turns into muffins…
Don’t you just love the recipes that call for salad oil? You must have been able to find salad oil before salads became healthy!

Will is a superb kitchen helper. Very enthusiastic. And even when a more discerning critic would judge the outcome unpalatable, Will applauds -con gusto-. It’s just fun to bake with him.
I do love recipes that call for salad oil — this is one of the reasons I chose it, actually. I figured that if it sounded the way my Gramma would tell it to me, then it was okay. Of course, I just use vegetable oil (okay, technically I used best blend.)
